Kimchi Cheese Toasties Recipe

Ingredients

  • 2 slices of good-quality bread (sourdough works brilliantly)

  • 1/2 cup of kimchi, drained and roughly chopped

  • 1/2 cup of grated cheese (cheddar, mozzarella, or a mix)

  • 1 tablespoon of butter (softened)

  • 1 teaspoon of mayonnaise (optional, for an extra crispy crust)

  • A sprinkle of gochugaru (Korean chilli flakes, optional for heat)

  • A handful of spring onions, finely chopped (optional, for a fresh kick)

Instructions

  1. Prep the Bread

    • Spread the softened butter on one side of each slice of bread.

    • If you’re using mayonnaise, spread a thin layer over the butter for a golden, crispy crust.

  2. Assemble the Toastie

    • Place one slice of bread, buttered side down, on a flat surface or plate.

    • Add a generous layer of grated cheese, then the chopped kimchi.

    • Sprinkle with gochugaru and spring onions if you’re feeling fancy.

    • Top with more cheese and place the second slice of bread on top, buttered side up.

  3. Cook the Toastie

    • Heat a non-stick pan or griddle over medium heat.

    • Place the sandwich in the pan and cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden and crispy and the cheese is melted.

  4. Serve

    • Remove from the pan, let it cool for a minute, then slice in half.

    • Serve hot and enjoy the gooey, tangy goodness!

Tips

  • A sharp cheddar pairs beautifully with the tanginess of the kimchi, but feel free to experiment with your favourite cheeses.

  • If you like a spicier kick, add a smear of gochujang to the inside of the bread before layering the cheese.

  • Perfect with a warm bowl of soup or just on its own for a quick and satisfying bite.
