Kimchi Cheese Toasties Recipe
Ingredients
2 slices of good-quality bread (sourdough works brilliantly)
1/2 cup of kimchi, drained and roughly chopped
1/2 cup of grated cheese (cheddar, mozzarella, or a mix)
1 tablespoon of butter (softened)
1 teaspoon of mayonnaise (optional, for an extra crispy crust)
A sprinkle of gochugaru (Korean chilli flakes, optional for heat)
A handful of spring onions, finely chopped (optional, for a fresh kick)
Instructions
Prep the Bread
Spread the softened butter on one side of each slice of bread.
If you’re using mayonnaise, spread a thin layer over the butter for a golden, crispy crust.
Assemble the Toastie
Place one slice of bread, buttered side down, on a flat surface or plate.
Add a generous layer of grated cheese, then the chopped kimchi.
Sprinkle with gochugaru and spring onions if you’re feeling fancy.
Top with more cheese and place the second slice of bread on top, buttered side up.
Cook the Toastie
Heat a non-stick pan or griddle over medium heat.
Place the sandwich in the pan and cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden and crispy and the cheese is melted.
Serve
Remove from the pan, let it cool for a minute, then slice in half.
Serve hot and enjoy the gooey, tangy goodness!
Tips
A sharp cheddar pairs beautifully with the tanginess of the kimchi, but feel free to experiment with your favourite cheeses.
If you like a spicier kick, add a smear of gochujang to the inside of the bread before layering the cheese.
Perfect with a warm bowl of soup or just on its own for a quick and satisfying bite.
