Doenjang stew is a comfort dish for Koreans, every mom has a different recipe for this dish. Our version is vegan, with clean Doenjang broth with some butter beans, tofu, potato, courgette, and some of our homemade kimchi in it. Doenjang is a Korean version of Miso, a bit funkier and richer than the Miso because of its long fermentation process of making. This dish is not spicy, so suitable for kids as well. Serve this with a bit of rice, or noodle. (*Rice is not included, but the stew portion is quite generous.)
