Baked Cauliflower

Baked whole cauliflower with Chojang, Wasabi mayo, pomegranate and pinenuts.jpg

Ingredients

  • 1 Whole Cauliflower (discard green leaves)
  • 3 Garlic cloves (optional)
  • 50g cheddar cheese
  • 2 tbsp of olive oil
  • 1 bunch of spring onions (finely chopped)
  • 1 tbsp of pomegranate seeds
  • 1 tbsp of toasted pine nuts
  • 1 tbsp of Jaru's Wasabi Mayo
  • 1 tbsp of Jaru's Korean Chilli

Method

  1. Preheat the oven to 180℃ and boil some water in a large pot
  2. Poke the bottom and centre of cauliflower with a knife (to cook all the way through!)
  3. Drop the garlic and cauliflower into the boiling water for 2 minutes (bottom side down!)
  4. Take out the cauliflower and place on an oven tray, dry it with paper
  5. Make a cross on top of the cauliflower and open it a bit
  6. Sprinkle cheese, olive oil on the top and seanson with 2tsp salt and 1tsp pepper
  7. Bake it for 30 minutes in the preheated oven
  8. Drizzle with sauces on top and garnish with pomegranate, spring onions & pine nuts
